O.K., I have over 100 lbs of Elk meat in my freezer and am trying to get creative with it while remaining health conscious. I found this recipe online and made it last night. I have to say it was really good. We took it to Shane's parents for dinner. His dad referred to it as the best chili he has ever eaten, other than Wolf Brand, that is pretty good I think! (He has an obsession with Wolf Brand, I'll never measure up!) You can make it with beef and I am sure it will be just as tasty. It is super easy!
